Kuriya Dining is a labour of love by two devoted Japanese chefs. Head Chef had been working for many years as a kaiseki ryori chef in Kobe, and brings to Kuriya Dining a solid foundation in classical Japanese cuisine. On the other hand, another chef was a French chef who had been working in Geneva for several years.
Together, their expertise and inspiration is the magic behind the stunning culinary experience called Kuriya Dining. By marrying traditional Japanese cuisine with innovative and contemporary dishes, the end result is perhaps more accessible to some than strictly traditional Japanese cuisine or the extreme opposite - those faddish 'Japanese' dishes that have no real basis in authentic Japanese cuisine.
In other words, Kuriya Dining is a happy medium between classic Japanese cuisine and the modern Japanese cuisine found in the chic restaurants of Tokyo.
